Ali's Famous & EASY Mexican Dip

My friend Ali makes this amazing dip ! I am constantly asking her what the recipe is and decided to blog about it to not only have it forever but to share it with you all to enjoy too!!


Ali's Famous & EASY Mexican Dip 


First:  Take taco mix 1/3 of the bag, 1 tbs of sour cram and one block of cream cheese and mix together..



Spread in the bottom of a dish...

Ali's Tip: Place it in a clear dish so your guests can see what they are eating..layer by layer!


Second: Place 3-5tbs of salsa on top...don't put too much or it will become watery..



Third: Cut up tomatoes (mine were from my garden..yum!!) and place it on top of the salsa!


Fourth: Cut up lettuce in small pieces. Spread it on top of the tomatoes. 


Fifth: Spread cheese


Sixth:   Add olives or whatever you want! You can add avocado, chili peppers etc


This dip is great for tailgating, super bowl or any party!!

Yellow Squash Bread Recipe

I LOVE making zucchini bread and zucchini fritters! I finally decided to experiment with YELLOW squash and found some amazing recipes on pinterest!! I hope you enjoy this recipe as much as I did!!




Yellow Squash Bread



Ingredients:
2 c shredded yellow squash
3/4 c white sugar
1 egg
1/2 c vegetable oil (or 1/4 c oil and 1/4 c applesauce)
1 1/2 c all-purpose flour
1/2 t salt
1/2 t baking soda
1/4 t baking powder
1 t ground cinnamon
2 t lemon zest (about 2 small lemons)
Heat oven to 325ºF. Grease an 8″x4″ loaf pan


Grate the yellow squash...


In a large bowl, combine the yellow squash, sugar, egg, and oil





  • In another medium bowl, whisk the flour, salt, baking soda, and baking powder. Stir in the cinnamon and lemon zest.
  • Add the flour mixture to the zucchini mixture and stir until just blended








  • Pour the batter into the prepared pan and bake ~45 min or until a tester comes out clean



Cool in pan for 10 min, then turn out onto a rack to cool completely



Freeze up to 3 months or enjoy right away! yumm!!

For my teaching assistants every year I give them an early thank you in September to thank them for all their hard work that they are going to do for me and my students throughout the year! I made these super cute bags and found this tag on a blog my friend Kelly showed me! 






I thought this was a great way to say 
"Thank you" in advance and it was super cute idea!!!
I placed all "bright" objects in the bag to go with
the theme! Post-its, highlighter, water bottle, tabs,
